This recipe was given to me by my friend Candy Mailhot. I made this several times before I decided that I like the banana in it to be mashed until smooth, but the strawberries to be left lumpy. The slices look prettier when there are bits of strawberry visible. Ingredients: 1 cup vegetable oil, plus additional for baking pans 3 cups flour, plus additional for baking pans 1 teaspoon salt 1 teaspoon baking soda 1/2 teaspoon baking powder 3 large eggs 2 cups sugar 1 cup strawberries, coarsely mashed 1 cup ripe banana, mashed until smooth 2 teaspoons strawberry OR banana extract. Instructions: 1. Preheat oven to 325 degrees. Oil and flour two 9 by 5 inch loaf pans, and set aside. Sift together 3 cups flour, salt, baking soda, and baking powder; set aside. 2. In a large bowl, combine the eggs, 1 cup oil, and sugar. Beat together until creamy. Add strawberries and banana, and mix well. Add extract and mix well. Add dry ingredients and mix just until blended. 3. Pour into 2 well-greased and floured loaf pans. Bake until the top is lightly golden and a toothpick inserted into the center comes out clean, about 1 hour.
