This white bean dip is super easy to whip up and ready to serve in minutes. Keep a can of cannellini beans on hand for those last minute invitations and unexpected visitors. Serve with store-bought chips or crackers, or make your own from sourdough discard. No crackers? Crudité– raw veggies — are great for dipping.

Ingredients

  • 1 ripe avocado
  • One 15-ml can cannellini beans
  • Store bought or homemade mayonnaise* or 1/3 cup olive oil
  • 2 tablespoons fresh squeezed lemon or lime juice
  • Salt and pepper to taste
  • Additional herbs to taste

*5-minute Homemade Mayonnaise recipe

*Black lime and black garlic work well with avocado—or pepper flakes for those who like a bit of heat.

This works without the avocado also.

Add fresh herbs such as cilantro or parsley for garnish.

Preparation

    1. Rinse and drain can of white beans. Chop avocado and mix with beans. Using an immersion blender or food processor, gradually add enough mayonnaise or olive oil with up to 2 tablespoons of hot water to create a smooth and creamy consistency.
  1. Add lemon juice, herbs, spices, salt and pepper to taste. Taste as you go — that’s the fun of making an impromptu, improvised dip.
